Recipe for Cinnamon Basil cookies

FRESH CINNAMON BASIL COOKIES

Ingredients:

2 cups of flour

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

¾ cup butter at room temperature

¾ cup sugar

1 egg

½ cup chopped fresh cinnamon basil

½ cup finely chopped walnuts

Topping:

3 tablespoons sugar

2 teaspoons cinnamon

Sift together the flour, baking soda, ½ teaspoon cinnamon, and salt. Set aside. In bowl cream the butter with ¾ cup sugar until light and fluffy. Beat in the egg, mixing until combined. Stir in cinnamon basil, dry ingredients and nuts blending thoroughly. Wrap and chill the dough for 1 hour until firm. Meanwhile, preheat oven to 350F.   Shape the dough into 1-inch balls. Combine remaining 3 tablespoons sugar and 2 teaspoons cinnamon.  Roll the balls of dough in this mixture until coated. Place 2 inches apart on ungreased baking sheets. Press cookies to flatten them slightly. Bake 10 to 12 minutes or until golden.  Cool

 

Herb Salt Recipe with Rosemary and Thyme

Homemade HERB SALT

Aromatic and Delicious

Ingredients:

¼ cup packed fresh lemon thyme leaves

¼ cup packed fresh rosemary leaves

½ cup coarse sea salt

1 cup sea salt

Directions:

  1. 1.   Place ½ cup coarse sea salt, rosemary and lemon thyme in the bowl of a food processor. Pulse, grinding salt until herbs have fine consistency. Add 1 cup sea salt and pulse to continue.
  2. 2.   Pour salt mixture into a shallow baking dish and let air dry for 2 hours. Transfer salt to a glass jar with a screw on lid.
