FRESH CINNAMON BASIL COOKIES
Ingredients:
2 cups of flour
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
¾ cup butter at room temperature
¾ cup sugar
1 egg
½ cup chopped fresh cinnamon basil
½ cup finely chopped walnuts
Topping:
3 tablespoons sugar
2 teaspoons cinnamon
Sift together the flour, baking soda, ½ teaspoon cinnamon, and salt. Set aside. In bowl cream the butter with ¾ cup sugar until light and fluffy. Beat in the egg, mixing until combined. Stir in cinnamon basil, dry ingredients and nuts blending thoroughly. Wrap and chill the dough for 1 hour until firm. Meanwhile, preheat oven to 350F. Shape the dough into 1-inch balls. Combine remaining 3 tablespoons sugar and 2 teaspoons cinnamon. Roll the balls of dough in this mixture until coated. Place 2 inches apart on ungreased baking sheets. Press cookies to flatten them slightly. Bake 10 to 12 minutes or until golden. Cool
Homemade HERB SALT
Aromatic and Delicious
Ingredients:
¼ cup packed fresh lemon thyme leaves
¼ cup packed fresh rosemary leaves
½ cup coarse sea salt
1 cup sea salt
Directions:
- 1. Place ½ cup coarse sea salt, rosemary and lemon thyme in the bowl of a food processor. Pulse, grinding salt until herbs have fine consistency. Add 1 cup sea salt and pulse to continue.
- 2. Pour salt mixture into a shallow baking dish and let air dry for 2 hours. Transfer salt to a glass jar with a screw on lid.
